Biscuits.
The first thing I ever learned to bake from scratch – at a very young age. It has definitely taken some trial and error to the get to this point of confidence with these – but they are so. so. delicious! I added Daiya shredded ‘cheese’ to these, and topped them with Trader Joe’s Everything Bagel seasoning – but you could do without the cheese and seasoning if you like. Also delicious: adding chopped jalapenos/fresh herbs/any spice you love! I used ground chia as the binder for this recipe, but you can also use ground flax!
These can easily be sliced to make little sandwiches, or to be slathered in butter and jam! Feel free to also smother these in vegan gravy and add some veggie sausages while you’re at it 😉
Makes about 7 medium sized biscuits.
2 cups flour (I use Bob’s Red Mill Gluten Free Flour)
1 tbsp baking powder
1/2 tsp salt
5 tbsp dairy free butter – cold (I use Earth Balance)
4 tbsp ground chia (or ground flax)
3/4 cup water
(optional) 1/2 cup Daiya cheddar cheese shreds
Sift together flour, baking powder, and salt. Add chia or flax to water, separately. Add butter, and ‘cut it in’. I use a fork, but you might have a pastry blender that you could use in this instance. If you’re using a fork like I do – press the butter into the flour with the fork flat side down continuously until you have a generally uniform amount of butter/flour clumps that are about pea sized.
Next, add your water/chia mixture and mix gently, and fold in your cheddar cheese, if using. Mix until the dough comes together well enough to pick up. You may need to add a tablespoon or two of water, depending on the type of flour you used. Flour your cutting board/work surface. Knead your dough on the floured surface until it feels a bit firmer to the touch. Flatten and fold the dough over multiple times – this is what creates a flakiness. Next, roll your dough out to be about 1/2 an inch thick and cut with either a floured glass or round cookie cutter. You could make these smaller or larger – depending on your needs.
In this case I sprinkled a generous amount of Trader Joe’s Everything but the Bagel seasoning blend on top of each biscuit before baking. You could also brush them with melted butter.
Bake at 450 degrees F for 12-17 minutes evenly spaced on a greased baking sheet. Keep an eye on it.
If they don’t get as browned on top as you’d like, put them under the broiler on low for a few minutes – seriously keeping both eyes on it!
